SPICE BUNDT CAKE – WEATHER DEMAND

As the weather changes from hot to cold, we all pack our summer outfits and take out sweaters, boots, and blankets. As our clothing preference changes from light and airy clothes to the thick and warm cloth so do our food choices changes, milkshakes are replaced with warm coffee and spicy food is more enjoyed.

Fall is my favorite time of the year, well is there anything one doesn’t like about the cold weather?

It is the time of the year when you can finally open all the windows and let that cool, crisp air in the house. You can take long walks without sweating or just sit and relax at home in your favorite sweater with a warm cup of coffee and a slice of delicious cake, my personal favorite is spice bundt cake.

Just try it once and you will fall in love with its moist delicious texture. After trying spice cake once you will definitely want to have more than one slice, few extra calories won’t do any harm.

It’s a general idea people tend to eat more in winter than in summer. Hey, we all have to eat more to keep ourselves warm.

In the cold weather with different events around the corner, we all love to try out different recipes and enjoy it with our friends and family.

WHY Do YOU NEED TO MAKE THIS CAKE?

This moist and delicious, spice Bundt cake is a perfect fancy-looking dessert to impress your colleagues and friends with, the batter is no different than from a regular cake but the end result looks like it requires a lot of work and you have special baking skills.

I just love the way spice cake looks when made in a bundt pan.

The spice Bundt cake is moist and tender with soft delightful crumbs and warm spices including ginger, cinnamon, and cloves.

I have tried this recipe almost half a dozen times to get that perfect cake and here I am to share the recipe with all of you.

You can bake this cake easily at home. As soon as you will start baking, the pleasant aroma of spice mixture will fill your house bringing that seasonal smell inside and giving you a winterish and fall feeling.

This dense cake necessarily doesn’t require any frosting, so no worries about layering it. This is the ultimate fall dessert and is even tastier on day 2.

HOW TO MAKE SPICE BUNDT CAKE?

INGREDIENTS YOU WILL NEED:
  • Flour 3 cups
  • Baking powder 2 teaspoons
  • Salt 1 teaspoon
  • Cinnamon 1½ teaspoons ground
  • Ginger 1½ teaspoons ground
  • Cloves 1½ teaspoons ground
  • Nutmeg 1½ teaspoons ground
  • Unsalted butter, at room temperature ½ cup
  • Granulated sugar 1 cup
  • Dark brown sugar firmly packed 1 cup
  • Large eggs 4
  • Peanut oil (or vegetable or canola oil) ½ cup
  • Vanilla extract 2 teaspoons
  • Buttermilk 1¼ cup

INSTRUCTIONS TO PREPARE:

  1. Prefer to preheat your oven to 350°.
  2. Generously grease butter and flour to a 10 or 12-cup Bundt pan (or spray a baking spray that includes flour) and refrigerate the pan while preparing the batter.
  3. Take a medium bowl and whisk together flour, baking powder, salt, cinnamon, ginger, cloves, and nutmeg and set aside. In the separate bowl beat sugar, eggs, and brown sugar at high speed for 3 minutes until it is light and fluffy. I used a standing mixer fitted with the paddle attachment, you can use a simple hand beater as well. Mixing with the standing mixer with the whisk attachment will mix it more efficiently and, in less time, plus it won’t tire your arms from continuous beating.
  4. In a bowl stir together oil, vanilla, and buttermilk to make a mixture (or substitution).
  5. Add flour and buttermilk mixture alternatively slowly in the above-created mixture, starting and ending with flour. Whisk the dry ingredients thoroughly enough so the cake will not have white splotches of unmixed dry ingredients. Hence take your time and mix it really well. Neither overwork the batter, mix just until all the ingredients are combined thoroughly.
  6. Now simply pour the batter into the Bundt pan, and firmly tap the pan against the counter to take out any air bubbles.
  7. Place the pan in the center of the oven and bake it for almost an hour.
  8. Do the toothpick test by sticking the toothpick in the center of the cake, if there is wet batter on the toothpick that means it requires more time.
  9. Transfer the pan to the wire rack and let the cake cool completely or wait for 20 to 30 minutes before flipping it over.
IMPORTANT TIP:

Dust the cake with powdered sugar before serving or serve it simply and if you want you can drizzle it with your favorite glaze as well.

This cake can be made one or two days ahead of any special occasion. Just after cooling the cake completely wrap it with plastic wrap and store it in an airtight container.

BUTTERMILK SUBSTITUTION

You can substitute buttermilk with either adding a lemon juice or vinegar to one cup of milk or simply replacing it with watered down yogurt or sour cream.

You can also change the flavor of the cake by substituting buttermilk with any one of these.

  1. Use unsweetened applesauce around 1½ cup.
  2. You can use pumpkin puree around 1¾ cup.
  3. Use grated baking apples around 2 cups. Do keep in mind to use peeled and cored form.

Applesauce cake should take the same time for baking but for the pumpkin and grated apple cake, they may take a few minutes extra.

IMPORTANT NOTES FOR BAKING

You will have to make sure that the cake comes out of the pan cleanly. Since it is a spice Bundt cake you cannot hide your mistakes with the frosting, which makes it slightly stressful.

With my experience I have found some helpful tricks, number one is to use a heavy-duty pan, second; abundantly buttering and flouring every corner of the pan and third; after the cake cools down, loose the edges of the cake a little bit with a knife. Finally, take a deep breath and flip it over. The cake will come out clean and perfect.
