Cake Base

  • 200g of wheat flour
  • 1g of salt
  • 240g of eggs
  • 50 ml of oil
  • 140g of refined sugar
  • 8g baking powder
  • 32 ml of lemon juice
  • 2g of lemon zest
  • 64 ml of orange juice

Filling

  • 200 g unsalted butter
  • 220 ml of lemon juice
  • Lemon zest
  • 240g of yolks

Icing

  • 120g of egg
  • 126g of sugar

Instructions to make Citrus Naked Cake

To prepare the dough, pass the wheat flour through a sieve, until it is very thin. Then mix it with baking powder, salt and set aside. In an electric mixer, place the egg yolks and whisk until foamy cream is obtained. Gradually add the sugar, until the mixture looks fluffy. Add the oil, lemon zest and citrus juices. Finally, mix this cream with the dry ingredients (flour, yeast and salt) and add the whites beaten in snow. Beat well, place the cake on a baking sheet and bake in a preheated medium oven for 30 minutes.

Naked citrus cake preparation

To make the filling there is no secret, after all, just sift the egg yolks in a pan and add the other ingredients, that is, butter, sugar, zest and lemon juice. Beat everything with a fan. Then, bring to medium heat and continue stirring until it becomes a consistent cream.

After assembling the naked cake, you can decorate the top with Italian meringue. To make this cover, just put the ingredients in the pan, bring to the heat and stir, until the edges start to whiten. Put the mixture in the mixer at full speed until reaching the marshmallow point.
