Before writing about this cake, I had a lot of things in mind. I have been in the house for very long and have tried a lot of new stuff. I loved the Italian dishes the most plus I’ve also tried a lot of cakes in sweets.

There were some easy recipes and difficult ones too. I always want to try new ones. Time to make any dish or cake doesn’t affect me. The taste in the end is the real deal!


This cake is famous in two bakeries in California. One is Peters Bakery and the other is the bakery. I don’t know what stuff they use as they are far from me but I like to develop my taste.

I bet both of them taste good. There are a lot of people who like Peter’s bakery and their fans do not like Dick’s bakery. In this guide, I will share with you a different and innovative recipe that is different from both of them!

I try my best to use homemade stuff in everything I bake or prepare. I do not prefer market canned stuff as they do not give me satisfaction in taste. So I also recommend that you do hard work and make the chef inside of you show it’s skilled!

These Bakeries always try new things and new flavors to innovate the style of this Cake. People still come there saying that their grandmothers or mother-in-law used to come 40 years ago. They tell others too that they ate Peters Burnt Almond Cake. Weird Flex But Okay!

Ingredients for Burnt Almond cake:

  • Egg Whites-4 eggs
  • Salt-3/4 tablespoon
  • Vanilla Extract-2 tablespoon
  • Cake Flour-3 cups
  • Baking Powder-4 tablespoon
  • Butter-6 oz
  • Almond Extract-11/2 tablespoon
  • Milk-1 cup
  • Ingredients for Syrup:
  • Water-1/2 Cup
  • Granulated Sugar-1/2 cup
  • An amaretto-1 tablespoon or Almond Extract

Ingredients for Pastry Cream(Almond):

  • Powdered Gelatin-1 tablespoon
  • Cold Water-1 tablespoon
  • Egg Yolks-4 Eggs
  • Powdered Sugar-3 tablespoon
  • Heavy Cream-1/2 cup
  • Butter-2 tablespoon
  • Almond Extract-1/2 tablespoon
  • Vanilla Extract-1 tablespoon
  • Pinch Salt
  • Granulated Sugar-1/2 cup
  • Milk-2 cups
  • Cornstarch-3 tablespoon

Ingredients for Almond ButterCream:

  • Flour All purpose-1/2 cup
  • Salt-1/4 tablespoon
  • Butter- 12 oz
  • Milk-11/2 Cups
  • Almond Extract-1 tablespoon
  • Granulated Sugar-11/2 cup
  • Vanilla Extract-2 tablespoon

Ingredients for Caramelized Almonds:

  • Sliced Almonds-11/2 cups
  • Water-2 tablespoon
  • Butter-1 tablespoon
  • Salt-1/2 tablespoon
  • Granulated Sugar-1/2 cup
  • Lemon Juice-1/2 tablespoon


To make Almond Cake:

  • You will need 9 cake pans. Use nonstick cooking spray on it.
  • Preheat the oven.Set its temperature to 350 F
  • Take Egg whites, milk, and the extracts. Wisk them together in a small bowl.
  • Take your stand mixer. Make sure it has paddle attachment. In its big bowl mix together salt, sugar, baking powder, and flour. Keep it on low speed for 30 seconds. Add the butter and milk to bowl now. Still keep it on low speed until it is soft. Change the speed to medium now. Keep it for another 90 seconds.
  • Stop the mixer. Move all the mixture trough big spoon once from bottom and sides. Add egg white, beat the mixture well. Move all the mixture once again using a spoon. Move the batter in both pans.
  • For 25 minutes bake the batter in the oven. Keep in mind that its soft and bounce back when pressed. Let it cool for 15 minutes. Take them out by inverting out of the pan. Make sure it's cool. You may invert it once again.

To make Simple Syrup:

  • Take a saucepan. Combine water and sugar in it. Wait till sugar dissolves. Heat the syrup till it boils. Use room temperature to cool it, for now, .place it in any safe place. Add almond extract in it.
  • Recipe to make Almond Pastry Cream:
  • Merge the gelatin and cold water. Use a small bowl for it. Wait for 5 minutes till it absorbs water. After this put the bowl in the microwave. Wait for 10 to 15 seconds only. By then the gelatin will be in the liquid form.
  • Take a medium-sized bowl. Wisk together egg, egg yolk, cornstarch, and sugar. Don't use a bit of sugar as it will be used later. Keep the flame medium until the material starts to boil. Keep whisking the egg mixture. While whisking and drizzling add about half the milk. Add eggs during this and continue it.
  • Place the pan back on the heat. Heat the cream. Be careful that you don't burn it. That's why keep the spatula in the pan and continue moving it. As the pastry cream thickens and bubbles, let it cook for 2 minutes. Wisk the butter, almond, extract, liquid gelatin together as you remove the pan.
  • Use wire mesh to pour cream in a bowl. As it's thick so be careful of any clumps of eggs. Cover the cream using cling wrap. Refrigerate it now for about 2 hours.
  • Your pastry cream is ready. When you use it on the cake whip the powdered sugar and heavy cream together. Fold both of them together.

To make Almond Buttercream:

  • Take a bowl and add flour and milk in it. Strain them for any clumps. Move them in a medium-sized saucepan. Keep the flame medium and heat the mixture. The liquid will turn thick. Its consistency should be good at the end. Remove it and let it cool now.
  • In the mixer combine the sugar and butter. It should have a whisk attachment. Beat it until its fluffy for around 5-7 minutes.
  • Check on the flour if it cools and sugar is fluffy. Mix them in bowl and extracts. Keep whipping until its well-combined.
  • Recipe to make caramelized almonds:
  • Put the almonds in the oven. The oven was on preheat as instructed at the start. Toast the almonds in the oven.
  • Combine water, lemon juice, salt, and sugar in a saucepan. Keep the flame medium. Stir until it mixes. Make sure the temperature is 325 F.
  • Add the nuts from the oven. Wait till they are coated with caramel. Add keep and continue doing it. Spread them with care.
  • After the nuts are cool enough, Chop them into chunks.

Final Cake making:

  • Cut the layers of cake into half. Place it on cardboard. Brush it with syrup.
  • Now take the pastry bag and fill it with buttercream. Fill the edges of the cake with it. It will be useful to hold the inner filling.
  • Take the pastry cream. Scoop it out on the cake and fill it till the buttercream layer in the edges cake.
  • Repeat this process for the next layer as well.
  • Press the caramelized almonds in cake now. Remember to keep the sheet below so that the almonds that fall off do not get wasted.
  • For further beauty, you can use the pastry bag with a star tip and pipe flowers on the cake.
  • Keep it for some time time to wait caramelized almonds stick to the cake.
